    Ingredients:

    • Salt, to taste
    • 2 cups (glasses) of water
    • 3 large eggs
    • 3 cloves of garlic, minced
    • 1 medium onion, chopped
    • 1 medium carrot, diced
    • French beans (optional), chopped
    • 1 bell pepper, chopped
    • Corn on the cob (optional), kernels removed
    • Fresh or frozen peas
    • Spring onions, chopped
    • Soy sauce, to taste
    • Fresh ginger, grated

    Instructions:

    1. Cook the Rice: Heat a splash of olive oil in a pan over medium heat. Add 1 cup of rice and sauté for about 2 minutes. Add 2 cups of water and a pinch of salt. Bring to a boil, then reduce the heat and simmer for about 10 minutes, or until the rice is cooked and the water is absorbed. Set aside.
    2. Prepare the Egg Mixture: In a separate pan, heat a bit of olive oil and fry 3 minced cloves of garlic until lightly browned. Add 3 beaten eggs to the pan and scramble with the garlic until fully cooked. Remove from the pan and set aside.
    3. Cook the Vegetables: In the same pan, add a bit more olive oil if needed. Fry 1 chopped onion until transparent. Add 1 diced carrot, optional French beans, 1 chopped bell pepper, corn kernels (if using), peas, and spring onions. Cook for about 3 minutes, stirring frequently.
    4. Flavor and Combine: Add soy sauce and grated ginger to the vegetable mixture. Stir and cook for an additional 5 minutes until the vegetables are tender. Combine the cooked rice and scrambled eggs with the vegetable mixture. Stir well to ensure everything is evenly mixed and heated through.
    5. Serve: Serve the Egg Fried Rice with Vegetables hot, garnished with extra spring onions if desired.
