    No-Bake Cookie Dough Bites: My Go-To Guilt-Free Treat

    Hey guys! Ella here, coming at you with another sweet recipe that’s been my absolute savior lately. You know those days when you’re craving something indulgent but don’t want to deal with the sugar crash? Well, I’ve got you covered with these amazing No-Bake Cookie Dough Bites!

    I stumbled upon this recipe when I was desperately searching for a healthier alternative to my late-night cookie binges (we’ve all been there, right?). After some trial and error (and a few interesting flavour combinations we shall never speak of again), I think I’ve nailed it. These little bites of joy are gluten-free, vegan, and sweetened with just a touch of maple syrup. Plus, they satisfy that cookie dough craving without any raw egg worries!

    Okay, enough chat. Let’s get to the good stuff!

    Ingredients:

    • 1 cup almond flour
    • 1/4 cup coconut flour
    • 1/4 cup almond butter (or any nut butter you like)
    • 3 tbsp maple syrup
    • 2 tbsp coconut oil, melted
    • 1 tsp vanilla extract
    • 1/4 tsp salt
    • 1/3 cup mini dark chocolate chips (use dairy-free if vegan)

    Instructions:

    1. Throw all ingredients except the chocolate chips into a bowl. I mean, you could mix the dry ingredients first if you’re feeling fancy, but honestly? Chuck it all in there. We’re going for easy here.
    2. Mix everything together. I start with a spoon, but inevitably end up using my hands. It’s messy, but kinda fun. You’re aiming for a dough-like consistency.
    3. Once it’s all mixed, fold in those chocolate chips. Try not to eat all the dough at this point (easier said than done, I know).
    4. Roll the mixture into small balls. I usually get about 12-15, depending on how much dough I’ve snacked on during the process (oops).
    5. Pop them in the fridge for about 30 minutes to firm up.

    And that’s it! You’ve got yourself a batch of delicious, somewhat healthy cookie dough bites.

    Now, let me tell you, these have been a game-changer for me. I keep a batch in the fridge pretty much all the time now. They’re perfect for those 3 PM energy slumps or when you’re Netflix binging and need a little something sweet.

    Pro tip: These are super customizable. Sometimes I add a scoop of protein powder to make them more filling, or switch up the chocolate chips for dried fruit. Once, I added some espresso powder, and let me tell you, those mocha cookie dough bites were LIFE-CHANGING.

    Oh, and fair warning: these are addictive. The first time I made them, I ate the entire batch in one sitting while binge-watching baking shows. No regrets, but maybe pace yourself better than I did!
