    • Cold water
    • 3 large eggs
    • Dried marjoram, to taste
    • Freshly ground black pepper, to taste
    • Fresh parsley, finely chopped
    • Vegetable oil (for frying)
    • Butter (for greasing)
    • 5 slices of cheese (e.g., Cheddar or Swiss)
    • Salt, to taste

    Instructions:

    1. Prepare the Potatoes: Grate the potatoes and rinse them under cold water. Drain thoroughly to remove excess moisture.
    2. Cook the First Layer: Heat a pan over medium heat and add a small amount of vegetable oil. Pour half of the grated potatoes into the pan, sprinkle with a pinch of salt, and pour the beaten eggs over them. Cover with a lid and cook for about 7 minutes, or until the bottom is golden brown and the eggs are set.
    3. Add the Remaining Potatoes: Add the remaining grated potatoes on top of the cooked layer, seasoning with another pinch of salt. Cook for an additional 5 minutes, covered, until the potatoes are cooked through and golden brown.
    4. Top with Cheese: Place the slices of cheese on top of the potato mixture. Cover with a lid and cook until the cheese is melted and bubbly.
    5. Serve: Carefully turn the casserole onto a plate, using a spatula to help if needed. Garnish with chopped fresh parsley and serve hot.
